This morning’s experiment with espresso eggs (express-œufs?) was pizza. Kid’s idea: throw lots of pizza ingredients and give it a go. I took it a little easier: pepperoni, mushroom, onion and tomato bits, milk, eggs, and spices. Cheese was saved for a topping, which I toasted in air fryer ... thereby making everything way too hot to eat. The heat storage abilities of steamed eggs is not to be messed with.
Results: ok, not overly pizza-like. Since everything's whirling around in a steam driven vortex only to suddenly solidify, it doesn’t evenly distribute all of the ingredients.

@mlanger For second breakfast I tossed an instant oatmeal, egg, bit of brown sugar, milk, water (after it soaked up all the milk), into mug and steamed it on espresso machine. It's not bad, Eggified oats!
@jerzone Egg plus oatmeal does not sound like a win to me. I think it’s because I always eat my oatmeal slightly sweetened. But I normally do cook my oatmeal in the microwave. I don’t use instant oats like so many people do. I use the old-fashioned kind. I normally cook them with a mixture of milk and water. When I’m dieting, I use a chopped up date as the sweetener. It’s actually pretty good.
@mlanger Not a big oatmeal fan, but I was looking for something different and thought adding egg might up the protein so it would stuck with me longer. It didn't solidify like egg-only experiments, just became a slightly denser oatmeal. Don't people make microwave lava cakes in cup? Espresso muffin...
@jerzone Yes, I’ve been known to make chocolate cake in a mug in the microwave. In fact, I had one just the other day, before I realized that my pants were getting uncomfortably tight. I’m dieting now.
When I’ve got fresh berries at home, my breakfast is standard: fiber one cereal + homemade granola + berries + 2% milk. When the berries are gone, I start cooking breakfast: usually eggs with mixed vegetables and spinach. When the veggies are gone, I switch to oatmeal.
@mlanger Microwaving might be worth experimenting with, especially if you have no interest in espresso drinks.
@jerzone I’ve microwaved eggs quite a bit. I basically do what you’re doing – make a mix of ingredients that includes eggs – in a large glass custard cup. Getting the timing right is tricky because if you under zap it, it won’t be cooked through, and if you over zap it, it’ll be like cardboard. it’s probably best done on a low power setting, but I haven’t experimented enough to find the right setting on my microwave. It is a quick way to make an egg sandwich, though.
